Coconut Grilled Shrimp and Pineapple

Summer, AKA Grilling Season, is upon us.  This easy recipe is sure to impress your friends and family at your next BBQ.

2 tablespoons of Mix Party Coconut Balsamic Vinegar
1/4 cub of Mix Party Extra Virgin Olive Oil
1 Lime
1 pound shrimp – peeled and deveined
4 slices of pineapple cut into 1/2 inch pieces

In a medium bowl combine Coconut Balsamic, Extra Virgin Olive Oil and juice from 1/2 lime.  Add shrimp and pineapple.  Cover and marinate for 30 minutes.  Skewer the shrimp and pineapple, brush with marinade and grill over medium-high heat until cooked (about 2-3 minutes per side).  Finish with juice of the other half of the lime.

This pairs perfectly with a glass of Bubbles Rose!
