Summer Salad Showcase – Creamy Vinaigrette

Nothing is better on a warm summer day than a nice fresh salad (Well, maybe a frozen margarita or daiquiri is better, but for the sake of this post, let’s assume we are talking healthy food instead of adult beverages 😀 ).

So salads — if you are looking for a fresh twist on the traditional vinaigrette dressing, let me show you how Mix Party can spruce up that salad.

Creamy Vinaigrette:

1/3 cup Mix Party Extra Virgin Olive Oil155x155_70_White Balsamic
3 tablespoons Mix Party White Balsamic Vinegar
3 tablespoons sour cream or unflavored yogurt
1 teaspoon Dijon mustard
1 small shallot (chopped)
Salt and pepper to taste

Prepare:
Combine all ingredients except for the shallots, in a blender. Blend on high until mixture is a creamy emulsion. Add additional vinegar, if needed, based on your taste preference. Add shallots and blend using pulse a few times until shallots are minced.

You can totally have fun with this basic recipe and make it your own.  Substitute Mix Party Lemon Infused EVOO for a burst of citrus or give it a little southwestern kick with Mix Party Southwest Inspired EVOO.
